It looks like a fleur-de-lis, which has been used in France for a number of things. It's still found on the flag of Quebec. Apparently it's a symbol that references the Holy Trinity of the Resurrection, the Assumption, and the Annunciation.

It's a Fleur de Lis, or an heraldic lily, whichever you prefer. It is the symbol of France, specifically, but used in quite a few things in relation to medieval and Renaissance art. It's a stylized lily, or it's supposed to be, and is very common.
