Looking for an email host. No knowledge in this area. Can some one help me, so I know what to look for? I would love suggests for companines as well. I work for a non-profit.

There are some companies that just provide email hosting, but you are just as well buying a full package at the price some of them are.

I use mango hosting. They do unlimited everything including mail boxes for up to 5 domains all for $19.99 per YEAR

I use Yahoo as an email host. I am a webmaster for an historical society and we were getting heaps of SPAM at the Society's address. So I opened an account with Yahoo and now most of the SPAM is blocked, or I can report it and Yahoo blocks the sender. Or Google, Hotmail etc.

I recently built a website for a church organization and getting their mailboxes made and I found a great site that was sympathetic to my cause. See link below. It was $5.77 a month and included unlimited email accounts that I could add.
